Behind the Bar: Holy Mole
The Holy Mole cocktail reimagines what’s possible behind the bar, giving ingredients a thoughtful second life. Used espresso grounds from our coffee shop, grounds that would normally be discarded, are infused into Mijenta Reposado tequila, unveiling rich roasted coffee notes that pair beautifully with the cooked agave.
Balanced with the depth of Pedro Ximénez sherry, the silkiness of crème de cacao, and the subtle spice of mole bitters, the result is a bold, layered sip that honors flavor, culture, and conscious craft.
