Riccardo Gaspari’s culinary story is rooted in the rugged beauty of the Dolomites and shaped by his discipline as a former professional athlete. Guided by a philosophy of regenerative cuisine, he champions a deep respect for the land, seasonality, and the Alpine community that inspires him. Through his Michelin-starred restaurant SanBrite, the welcoming Brite de Larieto Inn, and the artisanal Piccolo Brite Dairy, Riccardo brings the flavors of the mountains to life, transforming local resources into refined, soulful dishes. Together with his partner and collaborator, Ludovica Rubbini, they are redefining Alpine hospitality, blending contemporary vision with tradition and setting a new global standard for sustainable gastronomy.

Designed to celebrate our local farmers, ranchers and growers and the natural abundance of Kaua’i— hosted by the world’s most celebrated chefs, who’ll each visit us from across the globe. Our visiting Chefs by Nature collaborate with our culinary team to learn and discover the bounty of the Hawaiian Islands, local ingredients and traditional techniques, teach cooking masterclasses for guests, and host charity dinners in support of the Kaua’i Community College Culinary Arts Program—helping emerging local chefs bring even more artistry to the island.
