ABOUT CHEF RICARDO GASPARI
Riccardo Gaspari, born in the mountain town of Cortina d’Ampezzo, exchanged a professional athletic career for a culinary path defined by precision, creativity, and purpose. At the heart of his work is a commitment to regenerative cuisine that honors the land by giving back more than it takes. His ventures, SanBrite, Brite de Larieto, and Piccolo Brite, bring together technique, tradition, and sustainability to tell the story of the Dolomites on every plate. Alongside him, Ludovica Rubbini serves as the strategic and organizational heartbeat of these ventures. Recognized as one of Corriere della Sera’s twenty most influential women in food and wine (2023), Ludovica champions the values of authenticity, respect for nature, and regenerative hospitality. Together, they’ve built experiences that transcend dining, offering guests a connection to Alpine heritage, the local community, and the shared promise of a more sustainable future.
