Everglades Oysters is a South Florida–based regenerative oyster farm operating across 74 acres, making it the largest farm in the Gulf by acreage. The farm raises oysters in floating cages that filter millions of gallons of water daily, improve water quality, create marine habitat, and sequester carbon through shell growth. Founded by Josh Wilkie and Fabio Galarce, Everglades Oysters harvest fresh to order each week and distributes directly to chefs, ensuring peak quality and full traceability.
