Earth Month at NiNi
NiNi’s five-course prix fixe menu celebrates Earth Month with a thoughtful, deeply local approach to sustainability, where every dish tells a story of responsible sourcing and seasonal abundance.
Ingredients are sourced hyper-locally, including produce from Neighbors Farm, a woman-led farm just west of Tokyo, and are used with care across the menu to minimize waste. The menu also embraces whole-system thinking, featuring re-raised dairy cows to reduce food system waste, and reimagines key ingredients, like Tokyo-grown tomatoes, across multiple courses. Rooted in seasonality and mindful sourcing, the experience reflects a more sustainable, future-focused approach to dining.
