NiNi Restaurant

NiNi is shaped by the idea of Two Two — two coasts, two cultures, two rhythms moving together with ease. Guided by season and thoughtful technique, the menu celebrates sun-washed Mediterranean flavors, olive oil, citrus, Provençal herbs, and seafood, approached through a Japanese sensibility rooted in craft, restraint, and respect for ingredients.

Designed to move with the day, NiNi starts bright and easy, then builds as the hours unfold. Lunch lingers over shared plates and chilled pours, while evenings turn more electric. The energy is warm, social, and effortlessly elevated: a place to gather, toast, and stay a little longer—then come back and do it again.

Spotted Stone is a gin destination, home to one of Tokyo’s largest curated collection of Japanese gin where botanicals, ritual, and precision come together in a setting that feels both grounded and quietly electric. Rooted in Japanese cocktail culture and elevated by a locally curated gin program, the bar moves fluidly from daytime meetings and tea rituals into an evening of martini ceremony and shared moments. The atmosphere is inspired by nature, defined by restraint, craft, and subtle discovery.

Executive Chef Ryosuke Ishii

Ryosuke Ishii leads the hotel’s culinary vision with a focus on sustainability, translating close partnerships with local producers into refined, nature-driven dining experiences. His career spans some of Tokyo’s most iconic luxury hotels—including Park Hyatt Tokyo and The Tokyo EDITION, Toranomon—and he most recently led a 40-chef team at Rose Hotel Yokohama, driving impactful farm-to-table initiatives. Ishii’s cuisine is guided by seasonality and a respect for the origins of each ingredient. Favoring clarity over excess, his cooking allows the natural character of ingredients to take center stage.
