This summer, Dillon Dior—street sommelier, wine-culture writer, and founder of Slurp Wine Club—takes over Upstairs Lounge for a night where wine and music collide. Dillon’s bringing five sustainable, low-intervention wines to the space, hand-chosen to echo the season, the rhythm of the music, the feel of the room, and the nature-inspired spirit of 1 Hotel Melbourne.
Slurp Wine Club was born from the belief that wine shouldn’t be exclusive or intimidating. It’s about opening a bottle with friends, talking freely, and enjoying what’s in front of you... That spirit sets the tone for the evening.
Hidden on our first floor and inspired by nature’s palette, Upstairs becomes the backdrop for a vinyl listening party. With every pour, Dillon drops tracks that match the wine’s mood—creating a flow that’s playful, immersive, and easy to settle into.
As each wine is poured, paired canapés highlighting its key flavours will be passed around, tying every sip to its soundtrack and every bite to the moment. It’s a fully connected, seasonal experience—wine, music, and food working together as one.
