Sommelier's Spotlight
Each week, our sommelier selects one bottle of wine to showcase - chosen for its sense of place, craftsmanship, and how beautifully it pairs with our menu. This rotating spotlight invites guests to discover a single bottle in depth, through the lens of the person who knows it best.
This week’s selection: Fleet – Lichen 2025 – Mornington Peninsula
Distinctly Pinot Meunier with lifted red currant, blood orange, dried rose petal aromas, with a touch of stemmy spice and crushed herbs. There’s an undercurrent of mineral, almost saline tension, bringing savoury dimension to the otherwise jubilant fruit. It finishes long and perfumed. A wine of finesse and charm; eminently drinkable at cellar temperature yet equally refreshing with a light chill through this summer. Beautiful pairing with the Wood Roasted Aurum Slow Grown Chicken, or more original, with the Spaghetti alla Chitarra.
