Wine Glossary
RM
Récoltant-Manipulant is a term used in Champagne to describe a grower-producer who makes and bottles Champagne from grapes they grow themselves. We also use it more broadly to indicate that the winemaker grows their own grapes.
BD
Biodynamic wine comes from grapes grown with regenerative farming, focusing on a self-sustaining ecosystem. It goes beyond organic by using composts, herbal sprays, and lunar rhythms for vineyard work. This approach enhances soil health and biodiversity, aiming for grapes that reflect their terroir. In the cellar, minimal intervention lets the fruit's character shine. Biodynamic wines often show purity, energy, and balance.
O
Organic wine is made from grapes grown without synthetic chemicals, with a focus on soil health and biodiversity. In the winery, natural yeasts, minimal additives, and low sulphur are used. Certifications like ACO or NASAA ensure strict standards and regular audits. These certifications also prohibit GMOs and synthetic inputs in both the vineyard and winery.
OP
Organic practices in wine production avoid synthetic chemicals, using natural methods to support soil and vine health. Wines are made with minimal additives and low sulphur. These producers follow organic methods but are not formally certified.
SP
Sustainable practices aim to reduce environmental impact while supporting long-term vineyard health. This includes efficient water use, waste management, and responsible chemical use. The focus is on balancing quality winemaking with care for future generations
MI
Minimal intervention wines let the grapes and terroir speak for themselves. Techniques like wild fermentation, minimal filtering, and low sulphur are common. The goal is to preserve the wine's authenticity, allowing each vintage to express its unique character. These wines are raw, unmanipulated, and expressive
NS
No sulphites (sulphur dioxide) in wine means that no added SO2 (a common preservative) is used at any stage of winemaking. These wines rely solely on natural stability
MS
Minimal sulphites (sulphur dioxide) in wine means only small amounts of SO2 are added, usually just before bottling, to help preserve freshness and prevent spoilage. It balances protection with a low-intervention approach. The thresholds below are widely accepted in natural and low-intervention wine circles. Total SO2 under 70 mg/L for white and rose wines; Total SO2 under 50 mg/L for red wines
SC
Skin contact in wine refers to leaving the grape skins in the juice during fermentation. While red wines always use skin contact to extract colour, tannins, and flavour, white wines typically separate the skins. However, in techniques like making orange wines, the skins are left in contact with the juice, adding complexity and structure.
UFL
Unfiltered wine means the wine hasn't gone through a filtration process to remove solids like yeast, pulp, or sediments. This can give the wine a cloudier appearance and more texture, as some of those particles remain in the bottle. It often results in a wine with more complexity and a more natural, rustic feel
UFI
Unfined wine means the wine hasn't gone through the fining process, where substances like egg whites, clay, or gelatine are added to help clarify and remove unwanted particles. Without fining, the wine retains more of its natural flavours and textures, but it might have a cloudier appearance or more sediment. It's often seen in wines made with minimal intervention
AO
Aged in oak means the wine has been stored in oak barrels during maturation. The oak can add flavours like vanilla, spice, toast, or caramel, and it can also influence the wine's texture by softening tannins and allowing oxidation. The type of oak (American, French, etc.) and the length of aging can affect the wine's final character
V
Vegan wine means the wine is made without any animal-derived products during its production. This includes avoiding fining agents like egg whites, gelatine, or isinglass (fish bladders) that are sometimes used to clarify the wine. Instead, vegan wines use plant-based or mineral-based fining agents, or they may be left unfined altogether
PIWI
PIWI stands for Pflanzenschutz Integrierter Weinbau, which translates to "Plant Protection Integrated Viticulture." It refers to hybrid grape varieties bred for their resistance to fungal diseases like mildew, allowing for significantly reduced chemical use and more sustainable farming in winemaking.

RM, AO Light golden in colour, this late-harvest Furmint offers a fresh, fruity nose with aromas of pear, greengage, pineapple and citrus. The palate is fresh and juicy, medium-bodied with great acidity and a hint of elegant bitterness. Aged for about 8 months in oak barrels, it culminates in a long, lingering finish with notes of walnut and coffee cake.
RM, SP, Ml, UFI, AO, V 98% Semillon, 2% Muscadelle. RS138g/l. Honeyed apricots, marmalade and toasted almonds lead the way. There's a real zesty, citrus edge and a touch of botrytis spice (ginger, saffron). Rich & silky but still fresh with good acidity. Great with blue cheese, pate and fruit tarts.
