On November 20 and 21, 2026, NiNi at 1 Hotel Tokyo welcomes Singapore's acclaimed French neo-brasserie Claudine for the inaugural edition of CHEFS BY NATURE JAPAN. Bringing together Executive Chef Julien Mercier, Chef de Cuisine Bernadette Rozario, and NiNi Head Chef Nikko Policarpio, this exclusive two-day collaboration celebrates craftsmanship, seasonality, and a shared respect for nature through a collaborative dinner and brunch experience. Complemented by Champagne Telmont and premium mineral waters S.Pellegrino and Acqua Panna, the event offers a distinctive gastronomic dialogue between Tokyo and Singapore.
