Crafted with Rosella Gin, native raspberry shrub, mandarin, sparkling wine and soda, the cocktail is a celebration of resourcefulness and seasonality, with leftover wine and mandarin peels repurposed into a garnish dust that brings the warm glow of a Riviera sunset to every serve.
