At 1 Hotel Central Park, our commitment to sustainability extends beyond our walls and into the very heart of our community. We are proud to partner with Billion Oyster Project to ensure that the shells of the oysters you enjoy at our restaurant are not discarded, but given a second life in the vibrant ecosystem of New York Harbor.

Rather than let these valuable shells go to waste, we carefully set them aside for recycling. To facilitate this, the Billion Oyster Project provides shell collection buckets, making it easy and convenient for us to store them until they can be repurposed. Once collected, the oyster shells are transported to a curing site on Governors Island, where they undergo a natural cleansing process. Exposed to wind, rain, and insects for a year, these shells are meticulously prepared to re-enter New York Harbor, contributing to the restoration of this vital ecosystem.
