Our furry four-legged friends deserve some recipe love too. Our Culinary Director at 1 Hotel South Beach, Fernando Cruz, guides us through a recipe for treats to reward your pup for keeping you company during your time at home.

Ingredients

1 lb natural bacon (no sugar / no nitrites)
10 oz chicken liver
5 oz fine cornmeal
1 lb AP flour
8 oz chicken stock
1 oz organic ketchup (no sugar added)
1/2 oz egg whites

Preparation

1. Add bacon to a large nonstick frying pan and cook for 4-5 minutes until it is golden brown.
2. Place cooked bacon on a plate and set aside to allow any fat to drain.
3. Leave any bits of bacon fat in the pan and add the chicken livers to the pan and sauté.
4. Mash chicken livers so that they form almost a paste. Once done, add to food processor with cooked bacon and pulse until well blended.
5. Next, add the fine cornmeal until you have a coarse mixture. Once coarse, transfer mixture to a stand mixer with a paddle attachment for mixing (or mix by hand for an at-home arm workout!).
6. Add the flour and continue to mix.
7. Slowly mix chicken stock into bowl until the dough starts to pull away.
8. Place dough between parchments, and using sheeter, roll to 3/8-inch thickness or desired shape (why not use fun cookie cutters?).
9. Next, bake at 250°F for about 1 hour and 45 minutes. The “cookie” should be dry and golden when complete.
10. Once dry, pull out and lower oven to 200°F.
11. For glaze, combine ketchup and egg whites and whisk a bit.
12. With a brush go over the cut dog treats and bake for another 25 minutes.
13. Share them with your furry friend!
